Meet the Team

A note from the founder, Jenny Westerkamp:

In 2008 when I was a senior in college, I started a food bank club on campus to increase the awareness of hunger and food insecurity and support the local food bank. This experience gave me leadership skills and impacted me tremendously as a dietitian. I want to empower future dietitians to do the same. Together, we can create something really powerful across the country! 

Jenny Westerkamp, RD, CSSD

Jenny began her career in April 2008 during her senior year of college when she started All Access Internships (AAI), a community and coaching company for dietetic internship applicants. She also is the Team Nutrition Consultant for the Chicago Bulls, and owns a sales, marketing, and nutrition consulting company called Chicago Sports Nutrition.


Previously, Jenny was the Minor League Lead Nutrition for the Chicago Cubs, where she earned a World Series ring. Before that, she was the Nutritionist for Kitchfix, a prepared meals and consumer packaged good company. For 4 years, she was the Senior Sports Nutritionist for SportFuel, Inc. where she worked with the Rockford IceHogs, Chicago Blackhawks, and NBA Development League. She is also the co-author of Green Foods for Men.


Susan Stalte, MBA, RD

Board of Directors

Susan is a Pennsylvania-native and she graduated from Immaculata University in 2014 with a bachelor’s degree in Nutrition & Dietetics. She was accepted into Meredith College’s Site Preceptor 2014-2015 Dietetic Internship class, a partial distance internship. As of 2018, Susan completed her MBA and graduated with high honors from Missouri Baptist University.

Currently, Susan oversees two long-term care facilities and works as a freelance consultant. She is also the Director of Operations an an application coach for All Access Internships. 

Riley Maloney


University of Illinois Urbana-Champaign

My name is Riley Maloney and I will be a senior this year at the University of Illinois at Urbana Champaign. I have a depth of experience working with food insecure populations, including volunteering with local organizations from my hometown such as Food Fight for Hunger and Hope and Friendship Ministries, and doing outreach work for the central Illinois chapter of No Kid Hungry.


Additionally, I wanted to take on this role to help further eradicate hunger at both the local and national level; homelessness and hunger is prevalent issue in the Urbana-Champaign area and that is something I really want to change. 

In my free time, I participate in the Cross Country Club on campus, enjoy playing the guitar, and spending quality time with my wonderful friends and family (who put up with all my dietetics-related rants!).

I have been an active member of organizations like Food for Free, Fresh Truck and Community Servings for 2 years now. I also have been serving as a country rep for IAAND for 4 years now, and one of my targets has been becoming up do date on trends of global hunger and sustainability. 

For fun, I enjoy collaborating with local artists and cooking. 

Allyson Pendergrass

My experience with food insecurity includes volunteering for the Houston Food Bank through senior box distributions and special events, such as the Mayor's Back To School Event. In addition, I interned for a Third Ward Wellness Research Study on childhood obesity prevention for low socioeconomic populations, in which we created and piloted two wellness intervention programs for children. 

Outside of school and volunteering, I like to spend time outdoors, whether it’s hiking, kayaking, or site seeing.

My name is Kaysha Quiles, I am currently a student at The College of Saint Elizabeth and will be graduating in May 2021! 

I've volunteered at my local food pantry helping organize shelves, work the farmers market, and delivering groceries to those in need. 

If I'm not at school or at work, you can find me hiking some of the beautiful trails by my house!

My name is Jennifer Ingolia and I am a first-year graduate student at Clemson University in Clemson, SC. I will graduate in the spring of 2021 with my master’s in food science. 

I’ve worked with a few non-profit organizations to help reduce hunger and food insecurity including shelters, food pantries, and even a pay-what-you-can restaurant. 

In my free time, I enjoy reading, exercising, and hiking. 

Morgan Elmore

Hi, my name is Morgan Elmore, and I am a junior at New York University.  I am majoring in Nutrition & Dietetics, with hopes of becoming a registered dietitian.


I’ve worked closely with food insecure populations through my summer volunteering experiences.  Each summer, I volunteer at Camp ENERGY, a week-long summer camp for underprivileged children who are overweight, obese, or at risk for becoming so.  We teach them healthy eating and exercise habits, in hopes that they can take those habits home and apply them to their day to day life.  Additionally, I volunteered at my local food bank this summer, where I was able to work at their mobile farmer’s market which provides produce at a lower price, as well as work on the farm where the produce is grown, and the kitchen where produce is processed.  


In my spare time, I love to workout! I work at SoulCycle, and spend most of my time either working there with my friends or working out there!

​My name is Riley Collins and I am an undergraduate student at the University of Wisconsin studying dietetics and I plan to graduate in the spring of 2021!
Food insecurity hits close to home as I’m from a very rural community where hunger due to poverty is a big issue. I’m excited to be a part of an organization targeting a problem I can relate to!
